The oyster mushroom is one of the most popular edible mushrooms, and are one of the world's most important mushroom foods. Unlike the pale flabby things that you buy in the store, they are often tan or grey on top, firm and meaty. Their cousin the Angel Wing (Pleurocybella porrigens) is all white and more fragile, but still tasty. The Late Fall Oyster (Panellus serotinus) is more colorful, with its greenish purple cap, and more tough.

Panus rudis and Lentinellus ursinus are sometimes mistaken for the Oyster mushroom; but they are both hairy, and Lentinellus ursinus lacks a stem.

Be sure to check a field guide to be sure of your identification of these or any other mushrooms. The field guide can also tell you which of these fungi are edible, and which will make you ill.
