One of the most famous and easy to recognize of our edible mushrooms, this polypore features shelves that are traffic-cone orange on top, and bright sulphur yellow on the bottom. Often, only the edges of the growing shelves are tender enough to be eaten; these should be sliced off the main body, and they will regrow. What were once thought to be different color forms of it are now recognized as almost ten different species in North America.

Some people are allergic to it, with symptoms ranging from feeling hot, light-headed and flushed to throwing the mushroom up. Be sure to consult a field guide for aid in identification if you plan to eat this or any other mushroom.
