Mushrooms will forever be a source of delight and wonder in the kitchen. They are at once dark and earthy, floral, fruity. Their flavors, aromas and textures drive us to ridiculous extremes. They are little temporal pockets within the days of the seasons, expressing the very essence of the earth, the trees, the weather. It's no wonder that we can't resist running out into the woods to search for their sometimes hidden treasure, their pheremonal proddings!
